  • "food For The Soul" Recipes That Bring Families Together  By : Stacey Moore
The term "soul food" dates back to the South and the days of slavery in the United States, although this cuisine's roots can truly be traced back to Africa. Slaves on the plantation would cook thrown-away meat, such as pig's feet, ham hocks and chitterlings, combined with the discarded tops of vegetables, all seasoned with various spices to add flavor to meals. Today, many of the same combinations make up many soul food dishes. The actual term "soul food" caught on in the 1960s, as "soul" began to be used in association with Black America.

Today, soul food is a tradition in most Black families, and one of the most impressive aspects about its evolution is that it was illegal for slaves to read or write, so the recipes, which would become tradition, were passed on to future generations through word of mouth.

  • Healthy, Wealthy And Wise To Choose Figs  By : Stacey Moore
Lentils and figs make a wonderfully warm and hearty dish that's quick to prepare and nutrient dense. Herbed Lentils with Figs and Sausage provides 12 grams of dietary fiber, 25 percent daily value for iron and 10 percent daily value for calcium, yet contains only 22 percent calories from fat.

Sweet, chewy, dried California figs, lean Italian sausage (chicken or turkey), onions, carrots, rosemary, garlic and tomatoes give this dish a real Mediterranean flair. Common "supermarket" lentils are brown or green. They are cooked separately in this recipe, as the acid in the wine and tomatoes can inhibit softening. Serve in large bowls with crusty whole grain bread and a spinach salad. Finish off with homemade applesauce topped with cinnamon-spiced figs.

  • Legendary Dish Simplified  By : Stacey Moore
For many, New York City's "21" Club is the most glamorous dining spot. Since its colorful early days as an elegant "speakeasy"-the dimly lit bar's ceiling is still crammed with those distinctive hanging toy cars-"21" has attracted the rich, powerful and celebrated from around the world. The restaurant has also made the reputations of many chefs who have, in turn, altered its menu to suit the times. A handful of dishes, however, remain essentially unchanged (so as not to risk incurring the wrath of regulars, including not a few Wall Street titans)...among them, "21" Club Chicken Hash.

The original recipe-which appears in "21"'s cookbook and online-is rather complicated and high in fat. This streamlined version, while still luscious and a dinner party treat, was adapted by the chef de cuisine and is simple enough for even novice cooks-for example, brides just beginning to entertain-to prepare without a hassle.
